A sample check-in: better work lunches in ten minutes
I want more vegetables and protein at lunch, but I only have ten minutes and a microwave at work.
What Olive noticed
Your lunches lean on bread and cheese, which is filling but light on vegetables and protein. The fix does not need cooking at work. It needs a few things prepared on Sunday.
Five ten-minute work lunches
| Day | Lunch | Why it works |
|---|---|---|
| Mon | Leftover roast chicken, microwave brown rice, bagged salad | Protein, a whole grain and a vegetable you do not have to chop |
| Tue | Tinned tuna, white beans, cherry tomatoes, olive oil and lemon | Two protein sources and fibre from the beans; no heating needed |
| Wed | Frozen stir-fry vegetables, pre-cooked lentils, soy sauce | Four minutes in the microwave; lentils add protein and fibre |
| Thu | Wholemeal wrap with hummus, grated carrot, spinach and feta | Keeps the bread you like and adds two vegetables |
| Fri | Greek yogurt with berries and nuts, plus an apple | A lighter day that still has protein |
Sunday prep (about 20 minutes)
- Roast a tray of chicken thighs and cook a pot of brown rice.
- Wash a box of cherry tomatoes and a bag of spinach.
- Portion the yogurt and nuts into two containers.
One small swap to try
Next week, add one vegetable you already like to Thursday’s wrap and tell me how it went. Small changes you keep beat big ones you drop.
